This week I write to you from The Black Pig, a local gem hidden deep in the hills outside Fredericksburg city limits. As a resident of the Alamo Springs Ranch, this food truck is parked in the shadow of the well known Alamo Springs Cafe, just a mile and a half further down Alamo Rd. The sprightly owner of the eatery Edie Finidori, even helped open Alamo Springs Cafe before going her own way. She opened the Black Pig just over two years ago, and has been adding to her unique collection of seating and decor ever since. The atmosphere, southern hospitality, and mostly farm to table menus gives you a true taste of the rural life style.
